How To Grow Chicory During The Winter By Sue Doenim Chicory is a flavorful, easy to grow plant that you can grow all winter. The chicory leaves are a flavorful addition to salads and the chicory roots can be roasted and used as a coffee or tea flavor additive. To grow chicory all winter, start with a few chicory roots and plant them in a shallow container filled with a mixture of potting soil and compost. Place the container of chicory roots in a warm location that remains dark. Keep the soil moist, but not soggy wet, at all times. The chicory roots will sprout new green shoots in about 3-5 weeks and will be ready to add to your salads.
