Garden Cucumbers Taste Bitter? Inconsistent Soil Moisture Is The Cause By Sue Doenim Did you plant cucumbers in your garden and eagerly anticipate those first ripe cucumbers when you could pick a fresh ripe cucumber and bite into it's crunchy sweetness, only to bite into crunchy bitterness? Inconsistent garden soil moisture is the cause of bitter tasting cucumbers. The soil cucumbers are grown in must be kept moist at all times to prevent bitterness. Regular watering and mulch will help you accomplish consistent soil moisture. Even if your first ripe cucumbers were bitter, you can change the taste back to sweet on the subsequent cucumber production by beginning a regular watering cycle and keeping the soil moist. If you have not mulched your cucumber vines, add a layer of mulch to help retain soil moisture.
