Condensed Milk vs. Evaporated Milk - What’s the Difference?

Many dessert recipes call for the usage of either condensed milk or evaporated milk, and due to the higher price of condensed milk, home cooks often try to use the cheaper priced evaporated milk in the recipe and get less than stellar results. Why? There is a huge difference between condensed milk and evaporated milk. Different ingredients, different texture, different consistency, different taste. Condensed milk is a thick, creamy blend of milk and sugar. Evaporated milk consists of dehydrated milk solids. The two canned milk forms are not inter-changeable in recipes. Evaporated milk can be used as is (undiluted, straight from the can) in the place of light cream or half and half. When diluted with equal parts of water, evaporated milk can be used to replace fresh milk in recipes, or chilled and drank. Condensed milk is only good for usage as-is in recipes.
